    Our primary frying fat is grass‑fed beef tallow for its clean, delicate flavor and the kind of crispness you can only get from real, traditional cooking. 


    When a guest prefers a vegan preparation, we happily switch to organic coconut oil — no shortcuts, no compromise in quality.


    And because we stand by what we serve, we keep our kitchen free of seed oils. Always.

    We’re uncompromising about what goes into our kitchen — and into your body. Every ingredient we source is pure, unmodified, and grown with integrity, always from farms and mills committed to regenerative practices. All of our breads are organic, sourdough-based, and free of dough enhancers. 


    Our wheat flour comes from ancient grains milled by Heartland Craft Grains in Lodi, WI.


    Our gluten‑free bread is baked fresh by Sami’s Bakery in Florida.


    Our gluten‑free flour is thoughtfully crafted by JF Jules, a leader in clean, heritage‑focused milling.
